I would say it depends of your painted surface. If you got minor orange peel it wouldnt be a bad idea to start out using coars or medium and them finishing with the fine compound. Using fine compound will probalby yeild a good result on a good painted surface.

I would suggest working your way through all the compounds, course to ultra fine etc.., of course it depends on how smooth your paintjob is to start with. If it is already really smooth, i would use fine, then ultra fine.

You won't achieve the mirror-like surface by just using the Tamiya Finishing Compound. You have to get rid of the orange peel with 1500-2000 grit sandpaper first, then work the way from coarse, fine to finishing.

Normally, you need 2000-8000 grit sand paper, but Tamiya's Coarse Compound will replace these sanding procedures. Then, use Tamiya's Fine and Finishing Compounds. If you want to go even further, try Hasegawa's Ceramic Compound. This is finer than Tamiya's Finishing Compound, and the result is amazing.
