1997 front disc brakes

Replacing front disc rotors with Brembo units. What's a good brand of pads to use other than factory? I have never worked on this antilock brake system. How do I displace the brake fluid? Should I compress the brake caliper piston and let the fluid go back towards the antilock / master cylinder assemblies? Or do I let the fluid go out at the caliper by attaching a bleed hose and sending fluid in the caliper to a 'catch' reservoir? If I need to bleed the front brakes, do I start on passenger side first? Very much appreciate all tips!!!
