what is the correct size for the graphic that says "Shelby" on the doors

same size and font as the graphic that says ES 7/8" tall width is dependent on letter. You can still get these from the dealers. It's the best way so they look good. If your local Mopar dealer looks at you like you've lost your socks, post back here and I'll get you a dealer who has them or at least will order them for you.

I got some not even 6 month's ago for a shelby TurboZ. Took 1 day to order. Look in the body manual at the parts store, not the mechanical parts manual.
