What is the closest tire to a 31x10.5x15 in a 16" wheel?

Which tires would yall suggest for a nearly stock wanting some more beefy tires?

I believe you want a 265/75/16 tire.

How aggressive do you want and how much offroading are you doing? IMO, the best A/T tire available right now is the Bridgestone Dueler A/T Revo. Everyone I know that has them has nothing but great things to say and they are currently the highest rated A/T. I'd say the BFG A/T KO and Yokohama Geolander A/T would be my next suggestions. I can no longer recommend the Pirelli Scorpion A/T. My last set was all Brazillian made and have had several quality problems.

If you want a mud tire, I think the Bridgestone Dueler M/T and the BFG M/T KM are your best bets without getting into something super aggressive that isn't very street friendly. I have a set of the Bridgestones personally and find them to be exceptionally well behaved on the road...quiet, smooth, and responsive.

I was thinking mainly along the lines of a tire that feels good on road and doesn't make too much noise, but still has "ablities" off road.

I offroad once, maybe twice, a month depending on how much time I have. I don't crawl any so thats not an issue.

265/70/R16 is equivalent to a 31x10.5. 265/75/16 is equivalent to a 32x10.5.

I second the nomination for the Revos as a great AT tire. I have BFG AT/KO's and they are great too. I'd say the revos are a touch better on-road and the BFG's are a touch better off-road. Price wise I think they are pretty close (assuming you get the heavier-duty Revos which are equivalent to the BFG's). I have the BFG's and that is my preference between the too, but you truly can't go wrong either way. The Yoko Geolander AT's are quite a bit cheaper, but don't last as long (I've heard) because of a softer rubber compound - but this results in excellent wet traction.

Yup, the 02+ stock tires are 31x10.50-equivalent in the case of the 265/70-16 and 265/65-17 sizes.
Sounds like the Revos are pretty snazzy, but I can certainly vouch for my BFG ATs. On my second set, put 65K on the first, could have gone to 70K if winter weren't on the way and I hadn't had one of my Swampers crap out on me and force my ATs back into full-time trail service since I can't bring my self to cough $180 for a new SSR.
