More gears often means better acceleration times and / or better fuel economy with highway cruising.
It all depends on how the gear ratios are set.

During acceleration the point is to keep the engine as close to the power peak as possible. More gears make that easier.

What you say is true for smaller displacement, peakier, high revving engines but if you have gobs of torque, you will spend more time shifting than accelerating.

yes if you have that much torque then the 6 speed might help since the ratios on those are generally shorter then that of a 5 speed. if you have even shorter gears on a v8 then you'll be spinning your tires even more.

and shorter ratios in simple terms means more torque multiplication. so therefore it helps aceleration while your engine is in gear. this almost means that your engine will be in the gear for a shorter amount of time cusae its acelerating faster.
