1991 Chevy 350 V8 5.7l -CONVERTED-!!

We have a 1991 Chevy 350 V8 5.7L converted from throttle body injection to carburetor & the whole set up. Completely eliminated the computer system, changed the intake (4 1/2inch summit performance) & carburetor (edelbrock 600), change the pulleys to v-belt (changed pumps & pulleys) & changed the distributor to HEI vaccume advanced(with MSD cap & rotor & summit spark plug wires). Also added a mechanical oil gage, mechanical temperature gage, mechanical fuel pump, 12gallon fuel cell & bracket fans (electrical). Has a 355 5 speed transmission with a hydraulic clutch.
Runs awesome, still a couple links to be worked out. Cant play to much because of it being short wheel base & so light in the tail. Idles great, sounds great, responds great most of the time but as of 2 days ago it started losing oil pressure & engine power. & also had a exhaust smell but not dark smoke. We're thinking there may be a leak in the back of the intake gasket but not sure. We started it earlier & it was holding at 20psi while idling. Didnt drive it anywhere yet today. The other day, it was below 20psi at 3500rpm, usually stays at 35-40psi while driving. And it wasn't picking up speed like it normally does. I was wondering if anyone has any suggestions and also wondering people's thoughts, opinions & ideas for this set up all together. Facts, suggestions and was hoping to learn something about it that we didn't know. This is our first Chevy project, have had this truck for almost a year and have been driving it pretty often. Would love to make it even better than it already is. :)

First Guess: You would have been better off to keep the serpentine belt system
Second Guess: You would have been better off to retain the TBI and computer control.
How is the fuel pump plumbed? What are you using for a fuel tank pickup? Are you using a vapor return system? How is the tank vented?
I'm surprised the engine had drillings for the fuel pump pushrod. My '88 didn't.
Catalytic converter plugged?
OIl filter plugged (Is it orange?)
