I have a 2003 4 cylinder s-10 pickup. I have read that plugs and wires should be replaced at 35,000 miles but the chevy user manual says 100,000. which one is correct?

That truck should of had Iridium plugs in it from the factory. If it still has them or they have been replaced with that type they are supposed to last 100,000 miles.

Gm says 100K under normal driving.
Hard driving tends to shorten life of plugs.
Easy on the gas makes the last longer.

But considering gas mileage I would start thinking about replacement at 75-85K .
New plugs will improve gas mileage.
Wires is up to you but I usually replace wires with plugs and check cap and rotor and fuel and air filter belts and hoses and coolant change at 75K to.
